The recipient of numerous accolades, including Mouton Cadet Sunday Lunch Awards, Joe Shannon serves as the executive chef at the Radisson Blu Hotel & Spa, Sligo. A founding member of the North West branch of the Panel of Chefs of Ireland, Joe has also served on the panel’s National Executive Council.

A frequent college lecturer on kitchen management, motivation and hygiene, Joe is passionate about all things food. His cooking demonstrations are nationally renowned, raising hundreds of thousands of euros for well-deserving causes. He’s also travelled extensively, visiting Irish festivals throughout mainland Europe and in Abu Dhabi, and competing and judging at many international food competitions.

One of TV3’s Ireland AM and Late Lunch Live resident chefs, Joe is also well-known in the North West for his Monday radio column on Ocean FM, Cooking with Joe with Margaret Carr Flynn. We’re proud to have him as executive chef at The Brasserie.
