Our food and our chefs are at the heart of everything we do at The Brasserie. Led by our Executive Chef, Joe Shannon, our team’s mission is to create dishes that make the finest of Ireland’s cuisine accessible to all. In creating The Brasserie, our team spent over twelve months researching and collaborating with suppliers, both in Sligo and around Ireland. The result is menus that strive to offer the very best of our island’s meat, fish, and produce, paired with exceptional cocktails.

Book Lunch or Dinner
The Brasserie serves All Day Dining from 12:30pm to 5pm and Dinner from 5pm to 9:30pm. From 2 June, indoor dining is exclusively available to Hotel Residents, with Outdoor Dining available for Non-Residents from 7 June.
